“We eat with our eyes first.”

While the original quote is attributed to Apicius, the 1st century Roman gourmand, it has a home in modern Japan too. Japanese consider a dish well-harmonized when it is beautiful and peaceful to look at. The arrangement of food on the plates is dictated by the moritsukè, or rules which are based on balance and contrasts, concepts established centuries ago.
